Apple Pancakes
1 1/4 cups all purpose flour
2 1/2 teaspoons baking powder
2 Tablespoons sugar
3/4 teaspoon salt
1/4 teaspoon cinnamon
1 egg
1 1/4 cups milk
3 Tablespoons melted butter
1 cup finely chopped pared cooked apples
Set griddle over low heat to warm up. Sift flour, baking powder, sugar, salt,
and
cinnamon into a large mixing bowl. Beat egg well, add milk and melted butter,
and
slowly stir into the flour mixture, mixing only until dry ingredients are wet.
Add
chopped apples. When griddle is hot enough to make a drop of cold water "dance",
grease it lightly or as manufacturer directs. Then drop batter from a large
spoon
onto the griddle, lightly spreading each pancake into a 4 inch round. Cook over
low
heat until rim of each pancake is full of broken bubbles and underside is golden
brown; then loosen and turn (using a broad spatula or pancake turner), and brown
on the other side. Turn only once. When pancakes are done, remove to a heated
platter, and serve at once. Makes about 12 four inch pancakes.
Serves 6.
